01 - In a medium bowl, whisk together flour, baking powder, and salt; set aside.
02 - In a large bowl, cream the butter and sugar until light and fluffy about 3 minutes.
03 - Beat in the egg, vanilla extract, and lemon zest if using until fully incorporated.
04 - Gradually add the dry ingredients; mix until a dough forms.
05 - Divide the dough into two disks, wrap in plastic, and chill for at least 30 minutes.
06 - Preheat oven to 350°F 180°C. Line baking sheets with parchment paper.
